The Search for the Best Breakast in Austin TX

It's a pretty bold statement to claim the best breakfast in Austin TX but stick with me to the end and it'll all make sense.

A quick backstory..

In 2018, I took my first business trip to Austin, Texas.

 

As a native New Yorker, I know what I like for breakfast: a hearty bacon, egg, and cheese sandwich from a corner deli, a strong coffee, and maybe even with a cat lounging by the door.

 

So, you can imagine my surprise when I discovered that this staple of NYC mornings was seemingly nowhere to be found in the Lone Star State.

I had a client meeting that morning, so I was rushing through downtown Austin, still half asleep, craving something familiar.

 

I spotted a coffee shop in my hotel lobby and hurriedly asked the woman behind the counter, “Do you guys have any breakfast sandwiches?”

 

With a smile, she pointed to some foil-wrapped tacos and said, “We have breakfast tacos.”

 

Wait, what? Tacos? For breakfast?

I couldn’t help but laugh. “Where I’m from,” I told her, “we don’t eat tacos for breakfast. That’s lunch or dinner food!”

 

She chuckled as I reluctantly grabbed a few egg-filled tacos and headed out the door, baffled but curious.

The next day, I was determined to find something more familiar.

 

I Googled “breakfast sandwiches near me,” expecting a sea of options, but to my surprise, the results weren’t what I had in mind.

 

Panera Bread, IHOP, and Waffle House popped up, none of which were serving the kind of breakfast sandwich I was craving.

 

I found myself thinking, Where’s the bodega? Where’s the bacon, egg, and cheese on a roll?

 

That’s when I had an epiphany: Austin was missing something MAJOR.

 

Sure, breakfast tacos were delicious in their own right, but there was a major gap for good, quality NYC-style breakfast sandwiches ON A ROLL (not a bagel) but a good solid roll.

That trip planted the seed for what would eventually become Eggman—a place where both locals and fellow transplants could get a taste of the classic New York breakfast, right here in Austin.

 

It took a few years for the idea to come to fruition, but by 2024, Eggman was born.

But why do I believe our breakfast sandwiches will change the way Austin eats? It’s simple: variety.

 

While tacos are a staple of Austin’s breakfast culture, they shouldn’t be the only option. People deserve choices, and Eggman is here to fill that gap with something fresh, handcrafted, and with New York love.

Side note: I think New Yorkers get a bad rap.. yes we're always in a rush but when you get to know us we're actually nice people. We may be blunt and direct but we are nice people. 

Having lived in the South for many years now I've figured out the balance of a New York meal blended with a Southern Hospiality.

So while it all started with a foil-wrapped breakfast taco and a bit of culture shock, it grew into something more—a blend of my New York roots and Austin’s vibrant breakfast scene.
